Breakfast of Champions 1 – The Egg Burger

This is extremely fast and delicious – for those who have only 5 minutes of prep time for a hot, healthy breakfast.

Start by putting an Orowheat Sandwich Thin in the toaster, but don’t push the lever down quite yet. You can use regular bread for toast if you don’t have the Sandwich Thins around yet.

Brush-butter a small pan on the stove and crack two eggs into it for a hearty hunger, or one egg if you eat like a bird (I don’t).

Note: I buy the Omega-3 eggs. Yes, they are more expensive because the chickens are well cared for and fed flaxseed, but they are a good source of Omega 3 and that makes eating eggs a healthier proposition.

That is not a hair or a crack in my pan! It’s an egg white string – you’ve had those, right?

Scramble those eggs right in the pan. Push down the toaster with your other hand.

When the eggs start to be “gatherable”, gather them in from the sides of the pan to form a “burger”. Let it cook until it firms up pretty well – and flip it to cook the other side. Right about then, your toasted Sandwich Thin should pop up all nice and hot.

Plop the egg burger on the bun, add a little black pepper . . . and it’s already delicious,

But, if you add fresh sliced tomato with a little more pepper (yes, I love pepper), it’s even better . . .

You could add some extra fat and protein instead if you were feeling like it (ketchup too) . . .

Whichever way you go, this is a delicious breakfast burger. OK, you could add cheese if you were feeling fat-deprived.

If you don’t go sausage patty, you are munching your breakfast five minutes after you first think about it, and you have just one tiny pan to clean. That fits my schedule just fine.

    Sounds fast, easy and tasty! Haven’t found the sandwich thins yet but the shopping brigade is on alert to retrieve a sample when encountered.
    I’m looking forward to trying your variations on a theme approach with this; already thinking hyssop and feta, tomato and basil, etc. Thanks for sharing your speedy breakfast idea.

    I want one right now. It is 8:30 and I have no eggs, bread or sausage. Maybe a tomato, cheese and basil sandwich….Thanks for the pictures so we can see what it is suppose to look like!
